Most of the time when I BBQ something there are leftovers, especially with a Beer Can Bird. They usually end up in Sammies, Tacos, Diablos or ETC. However, today my brain was actually working and I decided to use some Breast Meat to whoop'up some Chicken Enchiladas Verde. Since I had everything that I needed to give them an honest go, I pulled out the leftover bird, torts, pepper jack, queso blanco, sour cream, salsa verde and started building.
Final analysis is this - - - "I will do these again and very very soon"
