Told you all you had to wait for the brisket meal's desert since it was a day early celebration. Here yah go:

A thing of beauty is a joy to behold forever :D



Difficult to make out from the pic but... Chocolate graham cracker and honey roast peanut crust, followed by a layer of chopped goo goo clusters, then the layer of cheescake... all topped by a layer of scratch made chocolate ganache.

Even chopped goo goo cluster chunks are hard to cut through.

Given that we were celebrating my birthday a day early (it's actually today, but weekends are easier get together times for everyone), AND this was my birthday cake... The heck with the worrying over the caffeine, sugar and calories, LOL :cheers: :chef:

I gotta say though, that thing was so dense and rich that nobody ate more than a small slice, except my 90 year old step father. Probably spent the rest of the day in a food coma too, lol.


On a more serious note, Stevia is an amazing substitute for sugar if you're trying to cut back. My taste buds always get a nasty aftertaste from every other low cal sweetener. Not to mention they're artificial food. Stevia is natural though, and even I can barely taste the difference between it and sugar. When I make apple pies, nobody can tell the difference between the sugar one and the stevia one.

I also used low calorie cream cheese and sour cream in the cheesecake. Recipe calls for a bit of lemon juice and zest, which also cuts back on the richness. This was still probably the most decadent thing I've ever made. My first cheesecake ever also, and it turned out amazing.

At least I wasn't even here for yours. That give ME a legit excuse for being belated. :P :mrgreen:

One of these days I'm gonna rant about the machine shop taking 2 1/2 months to do my engine and doing utter crap for work to boot... We are not amused at the time and money lost there.
