Collards the Suther'n Entree

Craving some Collards Green and had a couple Smoke Hawg Hocks that needed using so I got out the Yeller Pot.
Gave everything but the Collards a good Boiling for the Stock
Then deboned the Pig Knees, before adding the Greens
Well Of Course
The first of 3 bowls and wedge of cornbread
