Collards the Suther'n Entree

Craving some Collards Green and had a couple Smoke Hawg Hocks that needed using so I got out the Yeller Pot. :tup:

Gave everything but the Collards a good Boiling for the Stock
Then deboned the Pig Knees, before adding the Greens

Nice looking lunch right there Emm :)

Never had collard greens unfortunately.
I will need to go e this a shoot.

Well-done, OUP! :salut:

WV, we could never find nice-looking collards in the store, so we grew some this year. In a pot! Did okay, had enough for cooking and freezing too.

Thanks Y'all.
W.V. my late friend in Minnesota had never had them either until his wife found some at the Market and then he called me asking for a Recipe - - - - he was one of those dear friends that would ask me a question and then argue with me about my answer :dont: :laughing7: - - - I miss the daily phone calls towards the end - he was a true friend. OH I also sent him a huge batch of Mud Bugs and even Pickled some Okra for him with three kinds of hot peppers that he said it wasn't hot :laughing7: :lol: :D :roll:
