Cold smoked sixteen pounds of sharp cheddar today with pecan. Pretty hot in Corpus so put a large CI skillet full of ice under the cheese. Makes excellent gifts.

I don’t freeze. I have kept vacuum packed cheese up to a year in the fridge. Most of this batch will be given away to friends and family. A large portion will be headed to St Louis when I go visit my mom for her 92nd birthday.
BTW - it’s real important to wrap the smoked cheese well or vacuum pack. If you don’t wrap well your fridge will smell like your pit or an ash tray.

No heat - cold smoked with a 6” A-Maze-N tube for 2 hours using pecan pellets from BBQ Delight. A-Maze-N tune and an assortment of pellets (cherry, oak, apple, hickory, mesquite, and pecan) from BBQ Delight available on Amazon. So easy for cold smoking salmon, cheese, nuts, etc.
The old standby of a can full of wood chips and a soldering iron works fine for cold smoking as well.

And how long do you smoke it generally. I’ve made it on a pellet not on a traditional smoker which is what I have.

I’ve used an aluminum pan w/ ice cubes…you’d think after adding ice the 100th time using a cast iron pan would have popped into my mind…thanks for the tip!

Around two hours
BTW - don’t really need a pit. Just something to contain the smoke. Cardboard box will work.
