Italian Rainbow Cookies :):):):)
I've finally taken a stab at making my All Time favorite cookie in the world !
Lots of Almond flavor sandwiched between explosive Red Rasberry Jam from a local farm. Topped them off with Semi Sweet Chocolate , oh man these are addicting....
Apart from not getting the proper asthetics,they taste EXACTLY like the ones I get from the Italian bakery, just with a stronger Red Rasberry taste with these because I doubled the amount of Jam cuz I couldn't resist.

bsooner, if you've never had these before and you like Chocolate, Rasberry ( I used Red ) and Almond flavor you gotta try these. Man those look really nice, a lot of work in that huh? You reminded me of my long passed auntie, man could she bake. I'm useless at baking. Anywho whenever we visited our Aunty she always bought out the marshmallow cake with raspberry jam. Man you take me back to,them old fashioned days. Thanks. I'd love to be your neighbour!!!

Not really hard to make, just time consuming. This was my first try at these so I know I'll learn more next few times but the Hardest part was getting the layers to be even and the same thickness.

However, I doubled the Rasberry Jam but that's ur call. Get a GOOD quality Almond Paste, that's key.
I've bought these in the past for 15$ a # @ a true Italian Bakery and these taste absolutely Identical.
