Actually, I pre-soaked them in ice water to get chilled real good and then I dried, dipped in batter and fried.
I used a Tony Chacheres Recipe but this is the Recipe I'll be using from now on.

I don't keep cornstarch on my shelves either so I'll just drop that pre-dust glue B.S. - - - the batter alone should stick just fine
