I've done this before but plumb forgot about it until RMS posted his creation a couple months ago. Fortunately my CRS didn't effect me remembering to use leftover beer can Chicken to make some Enchiladas Verde without proper verde sauce. No I didn't have any Enchilada Verde Sauce so I improvised with some Sooner Sauce, Roasted Salsa and Sour Cream.
Seared me some Chicken in butter
Put them in some Guererro Torts along with the Salsa and Monterey Jack Chez
then sprinkled it with SBs Chipotle Seasoning
Rolled them together in a baking dish, and gave them some Oven time to melt and toast my late Lunch.
