I’ve lived some months in Brussels when I was at school, and sometimes I miss my favourite belgian dish: Filet Americain, a special version of french “tartare”.
It’s raw meat (filet) carefully seasoned with mayonnaise, picalilli, worcester sauce, salt, pepper, onions, fresh parsley and capers.
I grind the meat myself and make the mayonnaise.
In Texas there’s something similar with chopped cheddar, isn’t it?

My best friend's Wife loves tartare and has tried to get me to try it several times but, even tho I like my Steaks screaming and bleeding, I somehow just can't eat raw meat. Thanks for sharing that seldom seen dish.
