Here in nz the Maori here used to cook their food in the ground, a hangi, the honky being us white folk using same method but in a lazy way. I'll out a pic up soon. It's basically a 44 gallon drum with a sealable lid. It's on legs as a gas twin burner goes under it. A small hole is drilled about 4 inches from bottom. And about 6 inches up there's a ledge so a perferoted sheet sheet goes on that. You fill drum up to the hole then load it with meat. I do legs of lamb a piece of pork and about 3 chickens and then a muslin bag full of potatoes sweet potatoes pumpkin carrots on top. Then you seal and light the burners. The steam cooks everything and it basically works like a pressure cooker. Steam spits out as it heats up. 3 hours after it starts steaming it's ready. The food is amazing and just falls apart. Here's my one if I can find.

Sorry if I didn't say water, yep it's water filled to the drill hole. As I said it works like a pressure cooker. The meat just falls apart.
