My First Frittata

You might even call this a Free-Tata because of the three smoke cured meats that Wild Bill sent me are in it.
Then again you could call it Zip-Lock Frittata because, as Egghead mentioned, most every thing in a Frittata was leftovers from the Frig.
No matter whatcha call it, I call it good but the Smoked Salmon was more dominate than I expected and, secondly, I can fix and eat a Omelette in an 1/8 th of the time it took to do this beauty in the oven with C.I.
Mixed the chopped meats with two eggs, tblsp Salsa and grated Pepper Jack.
Then topped with grated P.J. and into a 350 oven.
After it puffed up sufficiently I switched to Broil and lightly browned the top.
Now I have a Reason to Season
