Salmon appeteezer for mañana

Smoked Salmon mold

I prefer wild caught salmon
For one filet about a foot long
2 Tbs kosher salt
4 Tbs Brown sugar
1 tsp ground black pepper (1/2 Tbs)
A bunch of dill (don't skimp on dill)

Put about 1/3 of salt, sugar, and pepper in the bottom of a pan
Place the filet skin down on the mix
Put rest of mix on the meat side and cover with the chopped dill
Cover with clear wrap
Put another pan on top and put a bunch of weight on it
Place in the fridge for a day
Turn the filet over (meat down), put the weight on it and back into the fridge for two more days

After three days remove the seasoning by rinsing. Draped over a bunch of foil and dried in the refrigerator over night.

It's ready to serve but if you like you can cold smoke for about an hour or so - I have used apple and cherry in the past - cold smoking with pecan this time.

Ingredients for mold:
18 oz smoked salmon
1-1/2 Tbs onion chopped real fine
3 Tbs capers
4 boiled eggs
1-1/2 cups sour cream
1 Tbs fresh cracked black pepper
