Alrighty all, time for me to give the goods! For these biscuits, you'll need to follow a few steps on point. I'll put a star next to that. ;)
Go ahead and place your oven rack on the upper third and start preheating to 500 deg.

5 cups AP flour
2 tsp salt
1 TBSP cream of tartar
1 1/2 tsp baking soda

*** Add all dry ingredients together in a bowl, then sift them into your work bowl ***

1/2 cup (1 stick) VERY cold unsalted butter ***
2 cups very cold whole milk ***
2 TBSP + 1 1/2 tsp white vinegar ***

*** Add the vinegar to the milk and stir well and let sit while you're mixing the other items ***

Grate the butter into the sifted dry ingredients and stir well with a small wooden spoon or rubber spatula or anything but your hands. * don't use your hands *

When this is mixed well, go ahead and add your milk and work the dough until it's a sticky mass of a ball.

Throw some flour down on your workspace, about 1/4 c or so. Get some flour on your biscuit dough to keep yer hands from stickin.
Pat it out and roll it to about 1/4" or so then give it a tri fold from one end to the other and roll again. Repeat this step a couple times if you'd like. The more you fold, the more layers you'll get.
End it up with your lump being around 1/2" thick.

Cut your biscuits from that and place them on an ungreased pan of your choosing. Remaining dough can be treated the same until you have all the biscuits you need/want, or get tired of making them!

Place your biscuits in the oven (if it's now ready) and bake for 9-11 minutes, or until golden brown on top. Mine are done in about 10 min with convection.

Brush the tops with melted butter when removed from the oven.
Serve how you see fit!!

Ladies and gentlemen, enjoy!!

The original recipe called for 450 and when I changed it up, raised the temp because 450 did not work out well. This was a nightmare for me because before we got our new stove, it took nearly 45 minutes for our old stove to hit 500. Heck, it took almost 30 minutes to hit 450. Lol! These biscuits LOVE hot and fast.

Recipe copied and handed off to the chef in the family. She has always commented she wants to learn how to make proper biscuits. I'll have a report with pics in the next few days. Thank you :salut: :salut: :salut: :salut: :salut:
