Tamales on the horizon!!

Postby Txdragon » Fri Jan 12, 2018 5:14 pm

Finally found a local source for the rest of the items needed for Tamales! I never would have thought the dried chili's and corn husks would not have been in any grocery store around but, nope.
Even the little Mexican market I would buy my beef cheek from had little to no options. Finally STUMBLED upon another carniceria that had a broad range of stuff. Tamales are now in my sights.
To be continued!!!

I've only made Tamales once with Venison and they turned out great HOWEVER - - - MAN that is a lot of work  You make your own masa or did you buy wet masa :?:

For sure! I've just turned the heat off to let the pork cool down to shred. It smells fantastic so far, and I haven't made the sauce yet, that part is coming soon, with pics of course!!

Making my own! Yeah, I shot myself in the foot on this project but I promised the wife I would make them as soon as I had everything I needed. Sigh.. The things we do for the ones we love, no?!

I can relate - - - I did the same the time I made them - - - got the hawg lard and all the accessories - - - ended up with 19 dozen and my Hispanic secretary said they were better than her Mom's - - - I think she was hinting for a raise :laughing7: :D

Not a good shot of the chili paste, here's a solo shot!

And here's their marriage. I will warm it all through, then let it cool and marinate overnight.

And final progress update.. I am truly pleased with the results. I was concerned about the masa, looks like I was worried over nothing. Tamales are one of the wife's favorite foods and she has given me her ultimate approval! My rating? I'd say like most other tamales I have eaten, they could benefit from a bit more salt. You can always add more salt, but never take it away so, that's safe.
Are they the best I've eaten? I'd love to say so since I made them, but I am a slave to honesty. I can't claim they are. What I can say is that if I were to buy these from somebody, I would DEFINITELY buy them again!

Money shots!!

You accepting mail orders yet? I want!!!! Really like the masa to meat ratio. That is usually my pet peeve with tamales. NOT enough meat, but you nailed those. :evilnana: :evilnana: :fiestanana: :fiestanana: :coolnana: :coolnana:
