After the thread I started this morning I decided I couldn't wait till this afternoon to make the enchilada's with flour tortilla's so while in town I stopped off at H.E.B. and picked up a 10 pack of flour tortilla's just as the lady finished putting them in the package and they were really warm. Did everything the same as in my earlier thread but I have more pic's. I had one flour enchilada from today and one corn enchilada from last night for lunch and right now I am trying real hard not to take a nap.

Re: Tex-Mex Lunch
I more I look at that Plate the more I realize how Beautiful those Enchiladas are.
I'm assuming that's sheeken in the filling and, if so, that's what We always called Enchiladas Verde - - - just pure Green Goodness on a Plate.

Sour cream then the filling, (chicken, monterey jack cheese, green chiles).

Re: Tex-Mex Lunch
I always put my sour dream on the outside but I'm gonna start adding it to the filling from now on
