Tex-Mex Night

I keep forgetting to take pic's until after the fact, must be old age. :dont: Anyway, yesterday I fixed a pot of taco soup and a small dish of chicken enchilada's. I cooked the chicken earlier in the day so when I got ready to make the enchilada's thing's went fast. I brought to a boil the green chili enchilada sauce and removed from the heat, dipped corn tortillas in sauce for a few seconds, put sour cream on tortilla, then meat mixture (chicken, monterey jack cheese, green chiles), rolled up and put in dish. Poured the remaining sauce on top of rolled up enchilada's and topped with monterey jack cheese, then baked at 350 for about 30 minutes. :cheers: Topped the the enchilada's with a little pico, a dash of chipotle pepper sauce in the taco soup and served on the good china :laughing7: . I had some of the meat mixture left over so tonight I'm going to do the same thing but I'm going to try it with flour tortilla's.
