I get mine a 15 min drive away but I get for my son and a friend at the same time. I get large free range, out of a dozen I get around 8 double yolkers. The yolks are bright orange and just taste so better. I'm told my crime brûlée is better than restaurant quality, I know it's the eggs.

you're rubbin it in, Pard, BTW my Brulee would be a "Crime" too if I tried to make it :laughing7: :D :lol:

Mines in my head 150 ml each full milk and cream, 5 egg yolks mixed with 3/4 cup sugar.
Heat both milk and cream up with vanilla essence.
Whisk eggs and sugar together.
Gradually whisk eggs as you pour cream mixture in,until it's done.
Pour into ramekins, I use tea cups.
Put these in a tray filled half way up with boiling water. I put some foil over these to quicken cooking process, bake for 30 to 40 mins until you get the wobble. Cool in fridge until ready to serve. I sprinkle a teaspoon of sugar on and use my gas torch to melt the sugar so you get the toffee type top. Once you've made it once you will do it all the time.my d.i.l loves these.
