Interesting breakfast failure

Stuck in house due to snow. Reading thread on another forum about Goetta. Had to try. No pinhead oats, no ground meat. Experimented with chopped cooked pork roast and 'other' breakfast cereal. Tasted good (how could it fail to, with SB TX Pecan?) , but it failed to congeal so it could be sliced into nice patties, and we had to name it Fuh Goetta Baot It.

I guess my question is why? Is it a money saving measure, or just a different flavor profile you are looking for?

Not money-saving...maybe Something To Do On A Snowbound Thursday?

We made Goetta once, years ago. Since I have not been liking whatever breakfast sausage we get locally, was going to attempt our own breakfast sausage. But if I can dial in the texture, this Goetta will be a regular for us.

So after some searching, it's a bit like scrapple. Interesting. I've wanted to try scrapple anyways so.. Now to locate some pinhead oats. Think it said steel cut would work as well. Hmmmm...

I'd like to see this!

I used Wheatena for this. I had bought it for breadmaking (and due to Wheatena's resemblence to vermiculite, it's kind of off-putting). Don't know if I'd use oats next time, and not sure whether I want to have prepacked sausage for the meat, or just ground pork.

Oh, the dilemma.... :laughing7:

Wonder if that may have been the issue with not congealing properly? I know overcooking oatmeal turns it essentially into Elmers glue; basically what the recipe calls for. Wondering if this may also work with quick oats. I honestly don't see why not **shrug** I've turned quick oats into hockey pucks before as well. Lol!
