Smothered Okra and gumbo

Smothered Okra and gumbo

It was time to replace smothered okra supplies that I use when making chicken okra or shrimp okra gumbo. Could find fresh okra so used frozen:

11 pounds frozen okra
2 pounds onions
4 pounds Roma tomatoes
2 heads of garlic
Drizzled with EVOO

Used three trays and over time consolidated into one tray. Three hours at 350 yesterday and another three today stirring about every 30 minutes.

I'll take a bowl and put a little smoked hot sauce on it for breakfast tomorrow. :tup: :salut:

Egg, do you jar that up or vacum and freeze :?:

Yes I vacuum and freeze in quants just right for gumbo

Speaking of shrimp okra gumbo and it certainly had smoked hot sauce :santa:
