OK, so I'm overdue for a pot of Gumbo - - - - I've even got some Holy Trinity in the Freezer awaiting - - - - but then I see this Magazine Perfect Pic Roux and realize that I'm still in school with the Dunce Roooo Cap on.

Yumm. Gumbo sounds great, but I am one of those guys that does the gumbo with okra and that stuff is so expensive right now I'll have to wait. That look fab though.

I too use da Okrie and sometimes I just break down and get some canned maters and okra and call it "Gamble Gumbo"

We like okra in our gumbo but only if it is chicken okra or shrimp okra gumbo. I cook it down on my BGE with tomatoes, onions, green onions, and garlic then freeze in 1# portions to be used later. Frozen okra is another option when you can’t find fresh.
