Chuck, mahalo for the link... this may be added to our "pupu" (appetizer) table at my next party. Always looking for something different. Now I have to go look for a "chicken fried batter" recipe.

a hui hou,

a hui hou,

Most chicken fried steak is made with a relatively light dusting of seasoned flour. Sometimes egg washed and re-floured if you want it heavier.

It is better than it sounds. Seems like it would be so greasy you couldn't eat it, but I think the batter soaks up a lot of the grease.

Well see that seasoned flour thang is where most folks mess up. Season the meat then do your thing..flour..eggwash..more flour etc. Ghuarantee the seasoning will stay put. Aint never picked out a speck of black peppa from an eggwash where the meat has been thusly treated. Saves a bunch of wasted spices.

I'm with BW on this one. I always dip in eggwash, season then batter.

For CFS, I season the meat then flour, then eggwash and flour again... Shake off the excess and fry...

Easy...
