With all this talk about cornbread lately I just had to get some and whip up some seafood cornbread. I've been making this stuff for over 20 year's, with fresh seafood or store bought stuff, either way, this stuff is good and my wife loves it. As I was mixing it up I kept thinking that something was missing, after I got the skillet out of the oven and poured the mix in it, it hit me, I forgot to add the cheese so I just mixed it into the skillet and it all worked out just fine. A while back I found some store bought breaded shrimp that are really good so I cooked a few of them to go along with the seafood cornbread.

Could you give us a recipe for your Seafood Cornbread? I've never heard of cooking cornbread like that, but I sure wood like to give it a try.

Here's the recipe I sent someone probably 20 year's ago. I don't alway's do it the same, tweak it the way you want, different seasoning, fresh seafood, ect. Enjoy
Seafood Cornbread
1 lb of crawfish tail meat, I use shrimp and crab meat. I use the tiny shrimp in a can sometimes and the lump crab meat in a can and it’s good. About 3 cans each.
1 box Jiffy Cornbread mix
2 eggs
2 cups shredded cheese (whatever kind you like)
1 can cream style corn
1 Tbs baking soda
1 Tbs Tony’s seasoning
1 stick butter or margarine (melted)
1 handfull of each: onions, bell peppers, green onions, I use to use Bird’s Eye Seasoning Vegetables in the frozen food section when I can find it.
1-2 fresh jalepenos chopped, I leave them out because of Sharon
Mix all together and bake at 350 for 45 min. or so. I use a 9 X 13 pan.

Willie, thanks for posting the recipe. I love cornbread and I love seafood. It would never occurred to me to mix the two together. You're the man!
