I doubt that I am in the minority when I say that I was raised on leftovers and Tex Mex is my Favorite way to treat them. Couple of Guerrero Soft Corn Torts (thanks ChilieFarmer), shred some leftover Cajun Fried Turk Breast, grate some pepper jack, nuke to melt, dump on some chopped jalapenos/pico de gallo/hot salsa (yes all three) then grate more PJ - - - nuke an Ear and turn it into spoon corn "AND THEN" Dinnah is Red-eye :tup: :chef: :bandito: :rambo:

10-4 C.I.C., we sometimes forget how much the Mexican Cuisine has provided us when it comes to creating a Dish or Recipe, especially from leftover meats, fish and seafood - - - until I really became a lover and discovered Tex-Mex dishes that weren't just fast food crap, most of those leftovers went into Sammiches :dont:
