I had every intention of using the last de-boned meat from my 3-2-1 Baby Backs for simple white corn Tacos BUT NOOOOOOOOOOO T-Dragon had to go a post up that Burgers Rancheros and my taste buds weren't willing to handle anything less that Muy Tex Mex Munchies. :scratch:

OK, meat de-boned and finely chopped - - - - - Hmmmmmmm :scratch: think think think :?:

Ah Ha, let's make some ABT's with this stuff and add a little cream chez and Salsa.

Half and de-vein several very large Penners :bandito:

Stuff the mix into the Penners :chef:

Wrap each with a slice of Bacon (the food of Chumpions) - - AND secure with Willie Pins - - - sprinkling with Hootchie Mama before putting in the Oven :tup:

Bake in oven at 400 for 30 minutes flipping half way through.
Then put oven on Broil and flip back to first position to crisp bacon.

Drizzle with some Suckle Busters Chipotle Sauce and Plate with a side of Cajun Green Pickled "Cous Cous" also called Okra from the great state of Okrahoma. :P

Only thing I'll do different next time is either pre-cook the bacon slightly before wrapping OR removed without Crisping. The Penners were pretty soft and I prefer a slight crunch to them. :chef:

Thanks, Y'all, trust me Sailor - - - even tho they were tolerable they would have been much better with a little snap to the bite - - crunchy bacon or not :D :laughing7:

Most times I do them over coals and it doesn't take 30 minutes plus to get the bacon crunchy so the penners are cooked but nice to the bite.
