Made these this morning.. Papas Rancheros! Potatoes, bacon, onion, garlic and some of my special tex-mex seasoning. Topped with cheese and homemade ranchero sauce (onion, bell pepper, garlic, cilantro, jalapeno, tomato sauce, chicken stock, salt, pepper, cumin), on a homemade flour tortilla.. Then sprinkled with a little chopped cilantro and served on our finest disposable plates!

Oh Lawdy, that's my kinda breakie - - - I'd better get to the store before I end up cooking my SECOND breakfast after looking at that
