Christmas Dinner
I cooked a 4 bone rib roast @ 200* in the oven until the internal temp hit 118*, removed and tented in foil unitl the internal temp hit 130* then I unfoiled and returned to a 500* oven for 10 minutes. Removed and let rest for 30 minutes then sliced. We also had roasted baby red potatoes, brussel sprouts and beans. I mad an au jus that consisted of defatted pan drippings, 1 cup of merlot and 1 cup of water reduced by half.

Well we is anti worm folks. Not sure we eat anything quite that raw and bloody looking. Do you know whut temps encysted sheep liver flukes reach the expiry date when they hosted by bovines? Sure it higher than whut you showing there. I have seen cows hurt worse than that which got well. I am repoating you to the guv'ment. Sorry.

I love bovine worms, adds protein to the meat! Don't tell the Guv on me, Liberals hate me.
Actually the finish temp of that roast was 135*.

What a feast you prepared! Looking good and "ono" (delicious). My family was over and I did 2 four bone rib roasts and 3 racks of baby backs. Sorry no pics. Was doing okay until the snow started falling about an hour before scheduled "removals"... and I went into a semi panic mode. I got it all done but it was weird and disturbing to see and hear the snow flakes disintergrate as soon as they hit the hot metal.
Been 11 years since it snowed in Seattle on Christmas. Everyone took some leftovers home (except the roast beef!) ...

What a fantastic meal! It didn't look quite so rare in the plated pics with the veggies. Like my SIL says when she orders steak or prime rib; 'Just swat it (cow) on the butt and walk it by the fire!'
I love brussel sprouts. I'm the only one in the family who will eat them.

It was a little rarer than it appears, the end slice was done a bit more than the middle. If it were up to me I'd the the "swat on the butt cook" too, but my wife is anal....
Funny about the brussel sprouts, my oldest daughter hates pretty much all vegetables but would eat brussel sprouts all day long. She's been known to have them for breakfast too!
