I ain't scared!! Oh believe me, I have spilled and had a little flame up more than once. Once reason I usually do it inside of a grill now. (Old Smokey is perfect for this) Can smother it quickly just by putting the lid on and if not smother than at least contain the burn!! Honestly I have never turned over a whole pan of oil or anything but I have sloshed some over the side that has flamed up and just throwing the lid on smothers it fast without losing the heat whereas with a typical gas burner I would have to shut it completely down then extinguish the oil fire, lose all the heat and get it all cleaned up before the cooking could resume.
