Finnish-Style Pancakes

Finnish-Style pancakes. Sucklebuster's Strawberry Preserves topped off with a bit of whipped cream.

This is not my recipe, but rather our very own Finnish resident member, Huppe!
From Huppe!
"Sure I can share a recipe here:
4 eggs
3 cups of milk
2 cups of flour
2 tbs of sugar
1 tsp of salt
1 tbs of vanilla sugar (or splash of vanilla extract)
3 tbs melted butter
Mix everything and put oven to warm in to 430F. Wait until oven is ready (this is important so the ingredients can rest a while).
Pour the ingredients in to some bowl or whatever you want to use and in to the oven until nice and brown. Enjoy with jam and/or apple sauce and whipped cream."
Baking time was around 35 minutes. My suggestion is to spray the you know what out of your pan because it's a bear to clean if you don't! :)

I cut the recipe in half and tried my
hand at these but something went ary in Tejas.
I'm sure I followed Huppe/Tobys recipe but the mix was very very thin when I poured it in the baking dish and at about 25 minutes I could tell that it wasn't probably the same as they did.
I pulled at 35 minutes because the edges were beginning to get very brown and yet the center had not risen to match the edges.
I whacked off a 2" wide slice across one side, plated and added butter, sour cream and myer lemon marmalade and they tasted done and reminded me of Egg Custard Pie from my childhood.
It went down well with my morning meds so life is good.
the ingredients I used was:
2eggs
1 1/2 cup milk
1 cup flour
1/2 tsp salt
1 tblsp sugar
splash of neller extract
1 1/2 tblsp butter
baked at 430

That looked right to me, OUP. At least, how we've done them...bake in a round metal pan and call 'em Dutch Babies. Yes, the sides puff, but the middle doesn't. Texture almost like a giant popover.
