Remembering how via Ribeye Cheesesteaks

Fired up the reliable Black Stone tonight, asked my butcher buddy to trim me up some Ribeye super thin for some killer Cheese Steaks.
Thinking about driving south 90 minutes to Philly and showing them what a REAL cheese steak is. I might not come back in one piece tho lol.
I REFUSE to use the ( cheeze whiz ) crap they swear by in Philly....DISGUSTING imo...

True Ribeye,cheeses were... Provolone and Havarti,onions,peppers,
Shrooms,Ketchup and Slap Ya Mamma over a fresh roll !!

That looks outstanding. I've been wanting to do that for some time. Just can't bring myself to as the butcher to shave a perfectly good ribeye

I totally get that lol.
It was easy for me because I asked him to NOT bring it out to show me before he sliced it up.Besides, I knew he could get it Razor thin for me without destroying it like I would.

I've mentioned that my former D.I.L. was from PA and there's sumptin about a PA Steak Sammy that PA ressies just do RIGHT :tup: Those look yummy, W V :salut: :cheers:

Its funny that the 2 most noteable ( steak shops ) in the center of Philly have stiff competition from some mom and pop shops that nobody ever hears of due to the lack of advertising $$$.

One night 4 car loads of my nieces and nephews hit these two ( famous ) steak shops at 3 am after a haunted house tour of Eastern State Penitentiary with us and a bunch of us tried both spots to compare since they are less than 200 ft from each other.
They were both good, not great but good.
What turned me off was the WHIZ lol.

Since then, I've found smaller shops that have a better cheese steak .

Well, altho I knew I couldn't even begin to get close to those steak sammies locally - - - your post had me craving a good sammie so I went to Schlotsky's at noon and picked up a Ruben for the Wiffy and a French Dip for me - - - - what a disappointment - - - I couldn't even finish half of mine and she was the same with hers so we ended up putting more lunch in the trash than our tummies. :banghead: :angryfire:
