Every year I try to get ahead of the thanksgiving craziness in the kitchen. So this year I'm starting early by making stocks way ahead of time. Today I'll be making 2-3 different kinds of stocks/broths. 1st up, the ole chicken stock. I already have the chicken parts in a pot with water and I'll be skimming the scum off for the 1st hour or so before I put my veggies in.
The veggies are already peeled, cut and washed.
The 2nd one I'm making is ham hock broth. Because, to me, thanksgiving isn't proper without collard greens(with bacon and onions)
The 3rd stock with be turkey stock of course, but I might have to wait on that one. Because it looks like my turkey isn't fully thawed yet.
And I just noticed I don't have any fresh thyme so I'll be running to the store here in a bit.

After skimming for about an hour

Nice! I love making my own stocks as well.
Yeah, cooking began a bit early for us also. I made the banana pudding already, and turkey is on day 2 of dry brine. Gonna start cooking him tomorrow morning.
Tonight is the cornbread for stuffing, and the wife is making her pink lemonade pies.

I used to do my own stock, but no longer, since I'm both prepping for a smaller crowd and am l-a-z-y. But I pre-cut, simmered and froze the turkey-roasting vegetables a while back, and prepped/froze my two dressings. Green bean casserole gets prepped today, turkey thighs tomorrow, and turkey plus the browned Brussells sprouts get done last-minute.

Last year was hectic for me, I had to work so everything got done last minute. I was even at Walmart like the day before, never again will I do that bs. We were in line forever, I was tempted to crack open a beer while we waited, but my wife punched me in the arm for even suggesting it lol. We both laughed.
