Cooked my first time ever Red Beans and Rice with Andouille and Cornbread today. I must admit that it was just OK and nothing more. The Wiffy liked it but said it was spicy which I never notice until I added some Suckle Busters Cajun Pepper Sauce and Slap Yo Mama. I ?may? try it again if I can put my hands on some of that Andouille that Egghead was raving about - - we'll see how that goes. I only cooked half of a pound package of the Blue Runner red beans that my Cajun friends brought me and I probably need to boil them faster or mash up more beans so that the pot licker is thicker. Live and Learn, Right Altho they need improving, the leftovers will not go to waste.
Finally tried it

Re: Finally tried it
I make my own Andouille. Goes in all of our red beans. I guarantee it is SPICY.

No doubt - - - - - - if I said I was going to start making my own sausage, I would be sleeping in the Fairlane or under the Carport.
Oakie what makes Andouille not just another smoked sausage

Hmmmmm, this stuff from Beaumont Boudin Company wasn't even close to that - - matter of fact it was very bland and mild to my taste buds
