Finally tried it

Cooked my first time ever Red Beans and Rice with Andouille and Cornbread today. I must admit that it was just OK and nothing more. The Wiffy liked it but said it was spicy which I never notice until I added some Suckle Busters Cajun Pepper Sauce and Slap Yo Mama. I ?may? try it again if I can put my hands on some of that Andouille that Egghead was raving about - - we'll see how that goes. :tup: I only cooked half of a pound package of the Blue Runner red beans that my Cajun friends brought me and I probably need to boil them faster or mash up more beans so that the pot licker is thicker. Live and Learn, Right :?: Altho they need improving, the leftovers will not go to waste.

I make my own Andouille. Goes in all of our red beans. I guarantee it is SPICY. :laughing7:

Spices. Look at what is in my Andouille:

4 pounds pork shoulder
1 lb. pork fat
1 tablespoon cayenne
1 tablespoon paprika
3 tablespoons black pepper, ground
3 tablespoons kosher salt
1 tablespoon dried thyme
3 teaspoons crushed red pepper
1 teaspoon cumin
1 teaspoon file powder
1 teaspoon mustard powder
¼ teaspoon bay leaf, ground
1/8 teaspoon mace
½ teaspoon allspice
1 teaspoon Instacure
4 cloves pressed fresh garlic
1 onion, processed fine
1 cup ice water

Hmmmmm, this stuff from Beaumont Boudin Company wasn't even close to that - - matter of fact it was very bland and mild to my taste buds :whiteflag:

the taste is becoming addictive to me - - - I had RB&R for lunch and supper yesterday and again for supper this evening - - - - it just gets better every time I reheat it - - - maybe I need to be on the East side of the Sabine :?:

Andouille is hands down my favorite !!

Okies recipe looks FANTASTIC !!
