BDSkelly~ New Years Black-Eyed Peas Step By Step

Seeing that its New Years Eve I thought I'd post my Black-Eyed Peas Recipe.
2 pounds of Black Eyed Peas.
2 Ham hocks. (The store was out of hocks so I'm smoking neck bones)
1 can of Rotel
32oz beef stock or broth along with enough water to cover the peas by an inch or so.
1 teaspoon of crushed red pepper
1 teaspoon brown sugar
1 teaspoon of oregano.
1 tablespoon chili powder
1/2 teaspoon granulated garlic.
Salt to taste but the remember that the hock will be salty so wait on adding till last.

First you will want to soak 2 pounds of peas over night. Or use the quick soak method on the bag.
In the pot add all the ingredients including the hocks covering the peas by an inch with the broth and water.
Bring to a boil then turn down the heat to slow simmer for about 2 hours.
Remove the hocks and strip the meat from the bone and replace the meat in the peas.

I smoked the neck bones at 250 for 4 hours. They turned out real nice and will add great flavor to dem peas...

All the spices and ingredients, bones go into the pea pot. Fill with beef broth and enough water to cover the peas by one inch.
Bring to a boil... Then turn down the heat to a slow simmer. Simmer for 2 hours. Then pull the neck bone from the pot. Shred the meat off the bone and return the meat to the pot. Give the bone to the dog.

:laughing7: :D :lol: so true - - I was actually kinda joking 'cause I use Martha White's Sweet Yellow Cornbread mix cooked in a seasoned cast-iron skillet. Which, BTW, I will be making with my traditional New Years black-eyes and cabbage stew. :tup:
