Honey Walnut Prawns

This popular recipe, also known as Honey Walnut Shrimp, is found in Hong Kong restaurants. My family loves it, and it is easy to prepare.

Ingredients:

• 1 lb. of large or medium shrimp, peeled and deveined
• 2 cups peanut oil
• 1/2 cup walnuts
• 2 Tbs. water
• 2 Tbs. sugar
• 1/2 cup cornstarch
• 1/2 cup egg whites
• 2 Tbs. honey
• 3 Tbs. mayonnaise
• 1 Tbs. fresh lemon juice
• 1/2 Tbs. condensed milk or whipping cream

Preparation:

Glaze the walnuts. Put 2 Tbs. sugar and 2 Tbs. water in a sauce pan, heat until sugar is dissolved, add ½ cup of walnuts and stir until the sugar is caramelized and the pot is dry. Let cool on wax paper.

Mix honey, mayonnaise, lemon juice, and condensed milk in a medium bowl until smooth.

Mix cornstarch and egg whites together to form a thick, sticky texture (use a wire whip for best results) and mix well with Shrimp. Set aside. Heat oil until 375 degrees and then deep fry the shrimp until golden brown. Drain and then fold in honey mayonnaise mixture. Mix well, sprinkle with glazed walnuts, and serve with steamed rice.

nawwww just don't like walnuts - - - I really prefer :texas: Texas Pecans :texas: but peanuts seem to go with Asian better ?I guess?

Thanks, I live on San Antonio Bay and will use this to "entertain" guest. I do a Pork fried rice as my Uncle Eddie was a Navy Chef.
Ran "Folk's Folly" a Steak House in Memphis. He is a Filipino "Ice expert"sculpture.
