DESSERT FOR A COOK OFF

WE ARE COOKING IN NOV, DIAMONDS AND DOLLARS, COOK OFF,
NEED SOME IDEAS FOR DESSERT. IT HAS TO BE COOKED ON SITE.

Been seeing a lot of so papilla cheesecakes winning in our area. Baked in a foil pan on the pit. We won with them awhile back too.

I'll see if I can get the Boss Lady to give me the recipe. She whips them up and I run the pit. I'll post it up as soon as I can.

She said she got it off the Pillsbury website. We cooled ours in the beer cooler. Also, we cooked ours on my offset.

2 cans (8 oz each) Pillsbury® refrigerated crescent dinner rolls
2 packages (8 oz each) cream cheese, softened
1 1/2 cups sugar
1 teaspoon vanilla
1/2 cup butter, melted
1 tablespoon ground cinnamon

1. Heat oven to 350°F.
2. Unroll 1 can dough. Place in bottom of ungreased 13x9-inch (3-quart) glass baking dish. Stretch to cover bottom of dish, firmly pressing perforations to seal.
3. In medium bowl, beat cream cheese and 1 cup of the sugar with electric mixer on medium speed until smooth. Beat in vanilla. Spread over dough in baking dish.
4. Unroll second can of dough. Carefully place on top of cream cheese layer. Pinch seams together.
5. Pour melted butter evenly over top. Mix remaining 1/2 cup sugar with the cinnamon, and sprinkle evenly over butter.
6. Bake about 30 minutes or until center is set. Cool slightly, about 20 minutes. Refrigerate for easy cutting. Cover and refrigerate any remaining bars.

Ameretto cheesecake

Have made this with and without adding fruit - works well both ways

1-1/2 cups coarse graham cracker crumbs
1/4 cup brown sugar
1/2 stick butter, melted
1 fifteen ounce carton ricotta cheese
1 eight ounce package cream cheese
4 eggs lightly beaten
1/2 cup sugar
1/3 cup Amaretto di Saronno
1 teaspoon vanilla
1/4 teaspoon salt
fresh or canned sliced peaches - optional addition

Instructions:
Combine crumbs and butter and brown sugar. Press over bottom and sides of a greased 9-inch springform pan, chill. Beat together the ricotta and cream cheese until smooth. Add remaining ingredients - beat until smooth. Add the peach slices. I like putting the slices in the pan radially. Put mixture into pan. Stabilize the Pit at 325. Bake indirect for 1 hour and 15 minutes or until the middle is firm. Cool 20-30 minutes in pan before removing.

My cousin cooked a apple pie at an event this year and won first. All I know is that he took a green apple and cored it out and then cooked the apple pie filling and placed it back inside the apple and cooked up a lattice and put it on top of it. He told me he found the recipe on Facebook.
