Rice on your pit??

Postby egghead » Mon Sep 16, 2013 9:11 pm

Came out real nice

Bring to a boil
2-1/2 cups of chicken stock
tsp paprika
tsp tumeric

1/2 onion chopped
2 cloves garlic chopped
1 tomato chopped
1 cup rice
1/4 cup frozen peas

Cooked down the onion in a little EVOO in an 8" CI pan
Added the garlic and cooked for a few minutes
Added the tomato and cooked till dry

Added the rice and fried it a bit

Added 2 cups of the stock - closed the dome and let it cook at 350 for 40 minutes. It was cooked fine but will go 45 minutes next time to develop a little crunch on the bottom.

The process followed a paella process but its not a paella.

Plated with honey glazed salmon and some cherub tomatoes. B)

I was going to put a little smoke on the rice but my traveling companion vetoed this time. And of course she is my judge, critic, and chief financial officer so I did not put up a fight - why fight when you know you will lose.

Nice thing about CI, you can cook with it so many ways!

Looks like a great recipe, I'll have to give it a go some time when I actually cook! :dont:

Looking good egghead!

Love the addition of peas and maters. Is that short-grain rice?

Yes it is short. Its Arborio - short grain rice is recommended for paellas and the process I used approximates a paella.
