Eggplant parmesean

I'm Italian,& have nevered made eggplant parmesean,[probaly not spelled correctly]lol.So today I made two pans of it,along with Italian sausage.I always add sausage to my sauce.The eggplant turned out good,for my 1st time.I roasted some garlic,& made garlic bread.All of this was made in the oven,not on smoker or grill.lol

Bill was it crispy or did it get mushy on you?

Gator,it stayed crispy.I fried the eggplants,some people bake them.Why do you ask,if it stayed crisp or get mushy?

I really like it crispy! Good show Bill. :D

I had several eggplant dishes that were musy-ish, cant do that. :cry:

I like mine crispy too. :D :D Had some that was baked and it was kinda mushy :roll: Didn't care for it.
