Whats it called?

Postby nascarchuck » Tue Jul 24, 2007 8:42 pm

Well, we had a storm roll through last night while I was fryin up some chicken. About 5 minutes left to go and the power goes out and we ended up having to go eat sandwiches at the inlaws about 9PM.

Well, tonight I pulled that chicken outta the fridge and threw it back in the oil and brought it back to life. Turned out pretty good!

Now, would this be called refried chicken or twice fried chicken?

Not really... I just use skinless boneless breast (I'm a breast man  ), mix eggs and milk, then dip the chicken, sprinkle on some of my seasoning that I mix up, dip in flour and fry on med heat. When about done, I will turn the heat up to brown it.

I will say that my wife doesn't care much for fried chicken, but she asks for mine!

Oh, if your having refried chicken, cook the chicken 95% of the way done, remove and put in the fridge overnight. Fry it again the next night!

Ok..I promise to try and quit being nosey. Tried some cottonseed oil here while back..gave me a bad case of indigestion as does Canola. Guess I switching over to peanut oil. Coconut oil works purty good but it real expunsive and make stuff taste like coconuts.

I think I suck at fried chicken! I think the real secret is a good old cast iron skillet! That's what my Grandma always used, along with good old fashioned lard!!

You guys gotta try this even if it sounds terrible. Take your favorite BBQ sauce and heat in pan. Add as much Louisiana brand hot sauce as you can stand. Bring to a simmer and dip fresh fried chicken into the sauce and place on a plate. I know it sounds terrible but everyone here loves it.+

Well it work much mo betta at my house to pass the sauce on the side and let them who wanted to dip to dip. Lot of different taste buds can gather under the same roof. Now the warden makes excellent fried chicken in the big no stick electric skillet. Now she can work the cast iron too but it usually too small to do a big batch. She do not cook with the skin..which I know is a mortal sin amongst traditionalists...but you dont even notice it being gone when you get to eating. Now my cuz's Granny would only eat the chicken skin. She did not like the meat. She weighed about 500 lbs. Not sure if there is a connection of course. :?

Don’t mean to hijack, but local chicken place had a dish like that…. Fried chicken, then while still wet hit with lemon pepper and what not. Then,,, on the grill for a bit.

It was really good. fried then grilled.

We don’t fry much (wish we did) but I have always wanted to do it at home.
