Chili beans

Postby Scotty Da Q » Sat May 05, 2007 6:29 am

How do you do your chili beans? (as a side...no meat)

I do mine real easy like and they're gooood.

3 cans pinto's (drained)
2 cans Rotels (tomato w/ diced chiles)
2 cans beef broth
1 medium onion (diced)
2 T medium hot ground chiles
1 T cumin

Add beef broth, onions, and Rotels and reduce by half, add the rest and simmer for 30 minutes.

Just curious on what others do...
Regards,
Scotty

Back in the old country (Minnesota) we called kidney beans chili beans cause that's what we used to make chili, that and a quart of home made tomato sauce and ever so small dash of chili power.

Well... I kinda thought posting the recipe would help...

"Chili beans" is a side (maybe a meal for some). It has a reduced beef stock, some maters, sometimes onions, chile's, and most of the same spices that you would put in a normal bowl of red.

I hope I wasn't too obscure there.

In our parts, chili beans are pinto beans with chili powder in them. Ranch Style beans are an example.

I don't much like them. I prefer pinto beans cooked with a little smoked jowl in them, or a ham hock is good.

I don't know what Navy beans are good for.

You dont like Navy Beans? Hmmm...they are good for everybody. Now dont consider them an everyday food like pintos...but once or twice a month works just fine. I guess swabbies must like em the best since they got named for the Navy.
