Hmmmm, might just do that and leave the grated cheese off of the baked tater this time.

Mmmm....corn....
We have a million back-ups (NuWave ovens, slow cookers, Sterno stove, induction burner), including a small prope camp stove we have actually used indoors. With power in our area iffy at times AND our 1960s June Cleaver stove and oven that we keep doggedly repairing, we kinda gotta.

ya need a couple of back ups, if ya had a gasser your coinbread could be baked, and a Cajun burner would cook the greens

Thanks, S.T., normally I would have at least a tank with a burner for boiling crawfish and ETC but the Wiffy get's panicy with Gas on the Property. This is because of her house burning due to a gas dryer before I met her and when her Kids were young. So I honor her feelings and pass on the gas.
I wanted to buy a Big Easy but ended up getting an electric Butterball Roaster instead which does a good job luckily.

3 hrs in the Crock Pot while my "FRIEND" fixed our Stove and since it was fixed I decided to whoop up some Rooster Cogburn Corn Dodgers to go with the Collards.
Waving the Lone Star and chowin down on some Suthern Fixins is about as good as it gets.

Time to finish off the leftover Collards so I decided to resurrect a very old Cast Iron Corn Stick pan to go with the Greens. Since I didn't have a can of creamed corn, I just nuked a ear of sweet corn and put the kernels in the Martha White Mex CB Mix
