Collard Greens Trial Run

Postby woodenvisions » Tue Jan 22, 2019 10:23 pm

So, I'm not sure what I was supposed to expect from making these. Emm ( OUP ) hooked me up from what I can tell. First time ever doing these and I was shocked at the amount of flavor the green leaf produced. First I cubed up some Thick Triple Smoked Bacon and fried it up with some Sweet Vadilla Onions and Fresh Minced Garlic.
Added the Collards and S&P, Pepper Flakes, a Smoked Ham Hoc and Chicken Stock and simmered for just under 2 hrs.
Between the Bacon and Hoc, you would swear it was cooked outside in the smoker.

Ill definitely make these again, thanks for your input my friend

Um, seriously ?
I was like a fish out of water when it came to making these, usually I don't stress over food but last night was testing for me.
Makes me feel good getting a from the Collard homelands

Thanks man

"HE SHOPS, HE SHOOTS, HE SCORES" - - - - THAT, my Pal, is exactly what THEY are supposed to LOOK and TASTE like.

ALL that I could possibly add to this is "I hope you're as hooked on these as I have been since the first day my Mom fixed them for us"

Not me, Pal, the credit goes to my Mom and those before her that pasted on the tricks of the kitchen. (most of which I was too dumb to listen to and remember) :banghead:

Check your PMs :salut:

Perfect greens, sir! The secret to collards is starting with a good base; get a good stock built and it's all over but the crying!

Picked up 2 beautiful bunches of Collards today and am thawing the Christmas Ham Bone leftover instead of the smoked ham hock this time.
So tomorrow is Collard Friday
