I have to echo CF. That is exactly what we use with our deer sausage.

I went to the store yesterday to check on bacon ends and pieces and the only thing they had was expensive so I asked the butcher and he just gave me 5lbs of trimmings no charge.

I like to buy the "store brand" or house fat bacon when it is priced right. Takes to the freezer pretty good as long as it is sealed.

I found 3 lb boxes of them at save a lot for $5.00, not too cheep, but i like the flavor it gives.
