Well there ya go. Get your self some natural casings and make some Potatis Korv!
3# chuck,
2# potatos (Parboiled and diced),
4 med onions (course chop or cubed),
2-3 TB salt,
1 TB each of white pepper, allspice and sugar.

Run it all through the grinder (Course bit) with the beef (might want to run the beef through the first time by itself).

Add one cup of fjord water (tap water can be subbed) and mix thoroughly. Stuff into casings. You'll want a decent fat content (20-23%) or the sausages will be dry. Length of sausage depends on your tastes but rings are traditional. Short ones are good for appetisers.

Remember to keep everything cold as you go along.

This sounds good Dave, looks like a great way I can sneak some taters :D

Low carb diets just plain ol suck, what is a meal with out taters or beans?? :cry:

Sub "Black Soy Beans" (not to be confused with black beans) for pintos or any other bean to get your bean fix. They come canned and are found in the organic isle. They have about 1 countable carb in the whole can. Soak the tators before doing anything with them, you'll be surprized how much starch will be removed.

I'll have to work on that link :wink: :lol:

Thanks, I'll have to try those tips.

Doc says I am in the early stages of diabetes, hence low carb diet, when I started checking the net I found out that a large percentage of folks that used Chantex to quit smoking are in the same boat. Some days I wonder if it was worth it
