Last Pastrami of the year. -FINAL PICs 12 20 08

Going to AZ for Christmas this year. Volunteered to bring some Pastrami, so I took an 15 lb packer out of the freezer today and its in the fridge defrosting nicely. Think I'll use Einstein this time instead of the WSM, and will trim it the brisket closer than I did last time.

Care to share how you make your pastrami?I did it once.Brined the brisket for three weeks.It turned out good,but be interested to see,how you do it.

Last one was posted in the Beef Recipee section http://www.texasbbqforum.com/viewtopic.php?t=4662 . This one will be pretty much the same with a little tweeking. Will post pics as it comes along. 8)

I find it works great. The traditional soak in pail method can get messy.

Its a capacity thing. Would have had to fire up both Einstein and Roma. Man, that WSM is a fuel hog :shock:

You're just spoiled having those ceramic cookers. :D 8) :lol: You could have fired up both ceramics and probably used less fuel than the WSM. :D

So very true. But getting back to the post, pics of the pastrami now posted. Will wait till tomorrow to slice. Total cooktime 11 hrs, 25min.
