Who makes the best sausage in Texas?

Bein a Colorado boy and lovin sausage, I would like your opinion on who in Texas makes the best sausage you have ever eaten. Than I want to buy some!

I'd go with Holmes Smokehouse for the brand. All their stuff is good, but I'm partial to their Garlic flavor, and the Pork sausage.

Can't go wrong.

Many of the BBQ folks like Slovaceks I have tried it and thought the ones I got weren't anything special. I think the best sausage I've had comes from the Muenster area, Fischers I think is the name of the place.

I do LOL I prefer my homemade sausage to anything store bought but if I have to purchase it I love Burton's sausage.

Will agree with Papa on the Sloveceks being nothing much to brag on but I also aint been overly wow'ed by Fischers. Best store bought sausage I ever had come from from a place called Green's Market in Zabcikville, TX
They also got voted as having the best Hamburger in Texas by somebody.

Besides the sausage I make at home...... my favorite to buy is Southside Market in Elgin, they sell there links at HEB and also Opas Sausage out of Fredricksburg makes some great links..... their jalapeno cheese is some of the best.......

Hey Sterling there is a guy in Sterling that sells sausage spice packets on Ebay. What do you know about Rudi's seasonings?

He use to own and run a butcher shop here in Sterling. People would bring in their pigs,cattle whatever to be butchered there. He closed and retired a number of years back.He has sold a variety of seasonings for years and years. I think they would be worth a try.

Got to side with txbbqman on the store bought; but if you ever get close to Tours, Texas which is about 14 miles north east of Waco. Bennie Norrs has the best sasuage in Texas IMHO; my preference is the jap sasuage.

Prasek's Hillje Smokehouse Sausage (any style)
Southside Market Elgin(better on the brown paper at the store)
Slovecek's Cheddar Jalapeno (bought from Snook Location)
Chapel Hill in most any store (not as good as few years back)

I might add that my favorable impression of Fischers is based on their dried (fermented) sausage and I maintain it is excellent. I have not tried their fresh sausage.
