Dry age refrigerators

Postby Copass pupil » Thu Feb 08, 2024 10:33 am

List of items to buy:
Refrigerator
Temp controller
Humidity controller
Fan
Humidifier
Dehumidifier
Heat source as simple as a lamp

I thought I’d put together something for those that might be interested in dry aging their meat longer than what you can get at the store. You can buy a dry ager meat refrigerator or build one yourself. I chose the latter and am finishing up building my second one tomorrow. I chose a true refrigerator mainly due to the quality of the unit. The humidity control on them allow for stuff to not dry out like residential ones do.

Each Inkbird give you a control range of an upper and lower limit. Specifically, Inkbird allows for better control the temperature and humidity. I am supplying a drawing to quicken the process of understanding found in the web. Any confusion, ask away. Many YouTube videos cover this as well.

Having a specific refrigerator helps with charcuterie and dry aged meat whether it’s pork or beef. Controlling the products so they don’t spoil or mold control.

Another trip to Home Depot for fasteners to secure the cords, fill in the hole and I’m done.
