Homemade Deli Ham

After putting up 25 lbs of canadian bacon, I had a half pork loin left over. We had seen a YT video of someone making a deli style ham out of a pork loin. Using the same cure from the canadian bacon I rubbed it down and then seasoned it with an SPG mix. Vacuum sealed the pork and let it cure for 3 weeks.
Yesterday we put it into the oven at 350f until it reached an internal temp of 160f, then wrapped up in foil and into the refrigerator.
Today took it out and sliced it paper thin on our Hobart slicer.
This will make some great ham sammiches this week.

Looking good!
I have done this several times but never thought to thin slice like deli ham and my wife loves the deli ham. Guess I'll have to give it another go.

I just saw this post. That’s nice looking ham. Funny I was just researching making Black Forest ham from scratch and wondered if you could use a pork tip roast.
