Been a little while since my last baconfest
The wife asked me for more bacon. First of all, man has pork prices gone up. 40#’s worth this time. Mainly 1/2 Canadian bacon and the rest belly and cottage bacon. Trying a new salt

With the prices of pork belly, I have become a fan of cottage bacon/ham. I've found some boneless butts for $1.99 a pound. Filet them, and mix some Hoochie Mama to your cure. Been doing 4 to 7 days dry cure, and then add good water and wet cure for 5 more days. Soak for a day, and hang for 12 to 24 hours. Quick rub of Hoochie Mama, and into the smoker. Feel free to use any rub you prefer.

I paid 3.99 a pound for shoulder, 2.69 for port loin and can’t remember on belly.

If you have any Chinese Markets in your area, try them. Pork belly here is $5.00 a pound. But the Oriental markets are $3.99 for boneless skinless.

Oh I’ve been looking. I’m waiting on 2 certification to get before I can apply for Chief positions down there. 1 takes 2 years to get.

Find you a nice town around 35-75k: hopefully away from Houston, Dallas, and other major areas

Just pulled this out of the smoker. Two pork butts turned into Apple-Chipotle Cottage Bacon. Blooming now, and will slice tomorrow with pictures. Enjoy follow Baconfest Lovers
