Decided to expand my horizons. Trying a 50/50 mix beef and chicken summer sausage. Will know the outcome tomorrow, just in the smoker this AM.

Here's the final product. 50/50 mix beef and chicken, fresh roasted Hatch green chiles, Townsend Spice Summer Sausage blend, and mixed with buttermilk. Kept smoker below 180, and smoked the sausage to 165.

Money shot is the proper description for that. It's beautiful, I have some nice 14 year old extra sharp cheddar cheese I had shipped in from Wisconsin that would go real nice with that right there.
