The second one is done 49%. It has more of a pepperoni taste to it. Definitely drier than the one I showed 2 weeks ago. This one got to 49% loss.

Apparently it’s not right. I asked for opinions and most said it was not done correctly. Back to the drawing board.

Well I tried my first and it was good. Smell was salami, tasted good and the color was there. I’ll see what the others turn out to be before I consider pitching it.
