Now that I have re-retired, back to making sausage. 20# of Andouille finished yesterday. 6 hours of cold pecan smoke before bring it up to temp.

Andouille is my absolute all time favorite Sausage, looks great !!

I'd love to earn how to make sausage. It seems so complicated. Those links look beautiful and great color.
